Psophocarpus tetragonolobus “Winged Bean’
Winged beans are widely grown in the tropics but not on a commercial scale. They need a greenhouse environment to thrive in NZ as our Spring is too cool for healthy, rapid growth. Seedlings are slow to develop for the first six weeks after which they grow, as vines, much quicker. Flowers are produced so long as the temperatures are high. The flowers are relatively large for a bean and delicious in salads, as are the young beans. Fully mature beans can be cooked as for green beans. The seeds are almost round and brown in this cultivar. A tuber, much like the scarlet runner bean, is produced and these can, if they survive their winter dormancy, reshoot the following late spring.
Sow seeds at room temperature or higher in early Spring and keep potted for 6 weeks then either plant in a large tub or in-ground under plastic or a greenhouse.
