Sichuan Pepper ( Zanthoxylum simulans )
An easy to grow tree that can grow just about anywhere in NZ. It grows into a small tree or large shrub. On the downside, it is fiercely spined on all branches so its position needs to be well considered. In autumn, small pepper-sized pink fruits are produced and at this colour stage, they can be picked and dried. The dried fruits (see photo), not the hard, black seeds, are the edible part. They are peppery, but very different from regular pepper in that they go through several taste and sensation phases, including a brief slight numbing of the lips.
Germination:
Seeds require a 3 month cold stratification at fridge temperatures, after which they need heat to germinate. Sow in late autumn, place damp pot in a zip-lock bag and remove 3 months or so later. If you live in cool areas, pots can be left outdoors in the shade but do remember to bring them indoors in spring to initiate germination. Seedlings are best kept in pots for their first or even second year before planting out.
